Excuse Me?


Today, the other core teacher, Ms. C, and I took our home school pupils on a research field trip to the local college library. 

Ms. C is a recent graduate of the college's grad school, so she was nice enough to introduce us to several of the librarians during our tour. One of the ladies we met was a very nice 40-ish librarian. Ms. C introduced each of the children to her, and the kids politely greeted her. 

During this time, I was standing behind the three children--a ten year-old-girl, an nine-year-old boy, and a seven-year-old girl--and Ms. C, waiting for a chance to introduce myself. As I was waiting for a moment to jump into the conversation, the librarian looks at me and says to Ms. C, "So, this is the oldest sister?"

ME? The oldest sister?!!? 

Have I mentioned that I'm at least 5'7" (and I was wearing wedges today that gave me at least another two inches) and 27 years old?! In the librarian's defense, I do look younger than I am, and get carded constantly, but I haven't been tagged as a high schooler in years.

Of course, the kids found this hilarious. I, for one, don't know whether to be excited or perturbed that someone thought I was at least 10 years younger than I am. I suppose I should just enjoy it while I can, right?

So, a quick anniversary story:

This morning, I woke up extra early (5:30 AM--eek!) so that I could go get us a surprise anniversary breakfast of coffee and doughnuts.

I laid out my dress, shoes and hair stuff last night, and carefully crept into the bathroom this morning, being careful not to shine the bathroom light in Landon's face or make any loud noises. However, when I tried to sneak out of the bathroom to head to Dunkin' Donuts, guess who was already waking up to get ME a surprise anniversary breakfast? One Landon Davis.

Great minds think alike, I guess!

Chicken Crescent Roll Casserole

I found this recipe on Pinterest (originally from Plain Chicken's website), and I think I am in love. Landon and I were actually fighting over who got the last piece. (The winner? We try to be sweet to each other, so we split it.)

Make it. Try it. Love it. Yum.

It wasn't quite hitting the spot when we first mixed together the filling, so I added a few zings of Frank's RedHot and the entire thing came together then. If you don't like hot sauce, you can always take this out, and the end result still will be really, really good. 

Plus, the entire meal cost us next to nothing, since we already had everything in our cabinet except for the cream cheese (half a pack @ 1.50/ pack) and the crescent rolls (2 packs at $1.00 each). Not too bad for something that fed the two of us for two dinners and a lunch. 

Just as it came out of the oven and right before we dove in!
Without further ado, here is our version of Chicken Crescent Roll Casserole:

2 (8 ounce) cans Reduced Fat Pillsbury Refrigerated Crescent Dinner Rolls
1 (10 3/4 ounce) can 98% fat free cream of chicken soup, undiluted
3/4 cup grated cheddar cheese or swiss cheese (or any cheese of choice)
1/2 cup milk

Filling
4 ounces cream cheese (very soft) * I used 1/3 less fat cream cheese*
2 tablespoons butter (very soft but not melted)
1/2-1 teaspoon garlic powder
1 tsp minced onion flakes
2 large cooked chicken breasts, finely chopped (or use about 2 cups, can use cooked turkey)
1/2-3/4 cup finely grated cheddar cheese
1/2 tsp seasoning salt
1/2 tsp ground black pepper (or to taste)
2 Tbsp. milk
1-2 cup grated cheddar cheese (for topping)

2 TBs of Franks RedHot or other hot sauce (optional)

Set oven to 350°F. Spray a 9x13 dish with cooking spray. Mix together milk, 3/4 cup cheese and undiluted chicken soup (can season with black pepper if desired).

For the filling --- (make certain that the cream cheese and butter are very soft) in a bowl, mix the soft cream cheese with butter until very smooth, then add in garlic powder. Add in the chopped chicken, onion, hot sauce and cheddar cheese; mix well until combined. Add in 2 tablespoons milk; mix to combine (add in a little more if the mixture seems too dry). Season with seasoned salt or white and black pepper to taste. Unroll the crescent rolls. Place 1 heaping tablespoon chicken mixture (or a little more) on top of each crescent triangle, then roll up starting at the thicker end. Drizzle a small amount of soup mixture on the bottom of the dish. Then place the crescent rolls seam-side down on top of the creamed mixture in the casserole.

Drizzle the remaining sauce on top (you don't have to use the full amount of cream sauce, just use as much as desired) and sprinkle with 1 cup (or more) grated cheese, or amount desired. Bake for about 30 minutes.

Blessing of the Fleet

So, I've been a super slack blogger this week (what can I say? Life was busy!), and I'm only now getting around to posting pics of the Blessing of the Fleet we had here in Mount Pleasant last Sunday.

The Blessing of the Fleet's a tradition to kick off the shrimping season. Leaders from various religious sects around the community get together to bless the boats who will be out and about this summer. There's a boat parade when all of the shrimping boats go past and you get to see the crews of all the boats who will be bringing in that fresh Lowcountry seafood this summer (which I can't eat, since I'm allergic to shellfish--can I tell you how much it STINKS to be a Lowcountry native and not be able to eat shrimp?!?!). Afterwards, there are craft booths, food stands from local restaurants and live local bands. In other words, it's a Mount Pleasant kick-off to the summer season! And let me tell you, summer is pretty much here since it's been charting in the upper 80s here this week!

There were over 12,000 attendees, so the Town of Mt. Pleasant had a trolley set up to escort people to the outlying parking lots.

Other fun things going on this week:

  • Only 3.5 weeks of school before I go to LONDON for three weeks!!! I've already started my packing list!
  • Phoebe went to the bark park here in town for the first time on Tuesday. Then, we went for a run on the beach. Our dog almost died of happiness.
  • Landon's having a great week at work. Yay for opening business accounts!
  • We've tried some amazing recipes from Pinterest lately--look for a post on those later this week.
